Eat Steak Every Day

We are constantly being told what we shouldn’t eat, what we should eat or how frequently we should or should not be eating it and with the hundreds of diet regimes (many of which are supported by famous faces with fabulous physiques) it is truly amazing that we mere mortals are able to feed ourselves at all!

One food topic that brings much confusion is eating red meat. It might be that we struggle with this one because it’s just so tasty and there aren’t many people who won’t salivate at the mention of a juicy beef steak. But the varying advice available in magazines, on the world wide web and on the television about red meat means it has become a guilty pleasure and the health conscious to the ordinary person on the street may opt to avoid it at all costs or spend 4 hours down the gym trying to ‘burn it off’.

“You shouldn’t eat beef on a daily basis because it sits inside your gut rotting away for months. Red meat contributes to heart disease and is full of unhealthy fats.”

Sound familiar?

How about if I told you that red meat can be perfectly healthy and that you can eat steak every day if you want to. You see, the key to a healthy diet is simply about moderation and getting the right balance. It isn’t eating red meat that is the problem; it’s the quality of that beef and what you eat with it.

Avoid: Processed red meats such as burgers and frozen meats with additives
Instead: Choose fresh cuts of organic beef from cattle that is pasture-raised

Avoid: Eating beef with bread ie hamburgers
Instead: Serve fresh salad and vegetables with beef. These contain enzymes which break down fatty deposits.

It is simple to prepare a health Steak dinner:

  1. Buy in some organic beef from a trusted retailer
  2. Grill or fry in the meats juices to however you like it
  3. Serve with a good portion of any of the following fat busting foods: Asparagus, Beets/Beetroot, Brussel Sprouts, Cabbage, Carrots, Celery, Cucumbers, Garlic Lettuce, Radish, Horseradish, Tomato.

If you want to keep it healthy but add more flavor to your steak? During cooking, just add crushed or chopped garlic, crushed peppercorns, rosemary, mixed herbs or other herbs and spices. Or you could marinade the beef before cooking with natural yoghurt and a mix of herbs and spices. Delicious!

How to Make Sushi at Home

Sushi is one of the best tasting dishes that you eat anywhere. Most of the time it is enjoyed in fine Japanese restaurants.

But sometimes a person wants to make sushi at home.  I should know.  I own a Sushi Restaurant Murrieta and get asked all the time by my customers.  They always want to know what is the secret to making great tasting sushi at home?

I always joke and tell them they can’t and they need to always come to my Sushi Restaurant. But seriously, if you are looking for great pieces of advice for great sushi you can make at home, pay attention.

First of all have fun.  Remember, you are not trying to make this for a Sushi restaurant Temecula full of people. You more often than not are making it for friends and relatives.

Remember great tasting food doesn’t have too look great. So relax because you have to remember there will be a learning curve.

For the rice, remember it is going to be sticky. So if you do not want rice all over the place, wash your hands often.

Another great tip is to try and not make the biggest sushi in the world. Yes everything tastes great. But if you try and stuff too many ingredients into one roll it will be a disaster.  You will have rolls that don’t roll up.  You will have ingredients spilling out because it is overstuffed.

Just don’t do it.

Fourth piece of advice, be gentle. Resist the urge to use a lot of force. When you make Sushi, all you have to do is gently roll.  Too much pressure with your fingertips or hand and the rolls will come out looking funny or in odd shapes.

Final tip is using of knives.  Obviously making sushi requires small pieces of fish. Well to stop the fish from tearing, make sure the knife is moistened. This gives you the ability to cut into it with the knife evenly. You will have nice pieces of fish that you are able to put into the sushi.

There you go.  Follow these few steps and you will be making great sushi like at my Sushi Restaurant Lake Elsinore.

Making Sushi doesn’t have to be hard. It can be enjoyable, fun, and of course delicious.

How to Cook Beef and Macaroni Chili

There can be little doubt that beef is one of the most popular meats in the world, and this is not likely to change any time soon.

Recently, there has been copious argument over whether beef is a super food to be eaten frequently, or a real problem food to be avoided whenever you can.

So what are we to believe?, even in scientific circles, there are many views, but during the course of this column we will submit a few helpful factual tips on beef, disprove many well-known fallacies and ensure that you get the correct information needed to form your own opinion.

However, before we do that, here is a flavorful recipe that you can cook for your children.

This is a wonderful recipe for ‘macaroni beef chili’. It is not complicated to make and is a simple and efficient way to feed a growing family.

Ingredients:

Macaroni – uncooked : one c
Lean Minced Beef : half a pound
Garlic powder : 0.5 tsp
Hot cayenne or chili Powder : one tsp
Salt : 1 small pinch
Freshly ground black peppercorns : 1 x sm. pinch
Tomato soup : 1 Tin
Quality cheddar cheese : 1 x oz. (finely grated)

Instructions:

Bring a large pan of water to a rolling boil and cook the macaroni roughly 7 minutes.
Fry the meat until browned in another good sized pan and very carefully drain off any fat that has been produced.
Add the garlic, chili powder, salt and pepper and then mix well.
Reduce the heat and fry gently for approximately 5 mins.
Stir in the cooked macaroni and tomato soup, and bring to a rolling boil.
Cook for a few more minutes until soup and macaroni are heated through.

Before you serve, add the cheese, and heat briskly till it melts.

Ladle into bowls and deliver to your hungry diners.

This is a wonderful recipe to prepare in bulk as excess servings can be safely kept in the refrigerator and served the next day.
If you have cooked very large quantities, you can leave the cheese out and freeze portions for later. Just before serving add the grated cheese, and heat briskly till it has melted.

Sushi is a great traditional Japanese dish that practically everybody has heard of and more likely tasted it.  And if you are lucky, you have tasted at wonderful Sushi restaurant Temecula.

It is a great traditional meal that consists of rice, seaweed and the famous ingredient, raw fish.

Now if you don’t like fish in the first place, of course you will not like sushi.But if you are a seafood lover, then you can bet you will enjoy sushi.

that wraps it up such as seaweed, like the Maki sushi.

Finally you have the Uramaki, which is also known by the name of inside out sushi.  It is called inside out, because it is sort of the backwards version of the Maki, in the sense that the rice is on the outside with the nori on the inside.Also, inside you are going to find either fish or seafood.

Mexican Peppers Are a Staple Food In Mexico

Peppers are common in various regions, however Mexico uses them more than any other country.  Peppers have been popular for thousands of years in Mexico and have been one of the main ingrediants in numerous meals. There are over a hundred various types of peppers that are grown in Mexico.  Although a lot of people avoid peppers due their powerful heat when consumed, not every chile is unbearable to many.

Mexican peppers are a popular Mexican food used in foods. It is used to add flavor to vegetables, and meats. Another Mexican spice is popular is Chipotle. It is made from Jalapenos that have been dried and smoked. The flavor is one of a kind and goes well with many dishes. It is gaining popularity outside of Mexico. One other type of chile pepper is Ancho. It is different from the other peppers because it has a sweet flavor similar to dried fruit.

Some Mexican spices used in cooking are Cumin, and Oregano. Mexican dishes that include tomatoes are perfect with oregano. It gives the dish an earthy flavor. Cumin gives Mexican dishes a taste that cannot be matched. Cumin takes three to four months of a long summer to grow. Cumin is a dry seed from the herb Cuminum Cyminum which is a member of the parsley family. This spice is the key component in curry power and chili powder. Cumin can also be boiled and served as a tea which is called “cumin cider”. Cumin is a spice that has been used for many centuries and will continue to be used by the people of Mexico.

Another pepper that is found in Mexican cuisine is the Fresno pepper. It looks like a smaller version of a sweet green pepper. You can find them in guacamole and also in dishes that include black beans. Chipotle peppers are another pepper found in Mexico. It is gaining popularity in the United States. It is actually Jalapeno peppers that are dried by being smoked. They add a smoky flavor to dishes. One other pepper is the Serrano. They are bright green in color with a very spicy hot taste. They are often used in salsa.

You can find dishes using different popular Mexican chiles such as chilate. Chilate is a drink that includes chile peppers, chocolate, and toasted ground corn with water. Another food is Chilis en nogada. It consists of green peppers that are stuffed and fried and covered with cream and pomegranate seeds.

Natural Gas Grills and Turkey Cooking

The holidays bring with them thoughts of carving and serving tasty turkey dinners to your loved ones. Convention has its fans, but perhaps this year you’d like to try a twist to your turkey recipe. 

If you’ve got a gas grill and enjoy the hazy flavour of grilled meats, why not try grilling your turkey this year? It isn’t only possible, it is rather simple. And it delivers a delicious flavored bird to your table. Plus, having the turkey on the grill instead of the cooker leaves you with all the room you must prepare the rest of your dinner in less time. When you are ready to buy your turkey, the first thing to consider is the size of your grill. You don’t want a bird that is so gigantic that it can’t fit on the griddle rack. 

Ideally, the turkey you select should sit on the griddle and the lid should close without touching the bird. If this isn’t possible, don’t worry, you can still griddle your turkey. You’ll need some heavy duty alcan foil and either a V shaped grill stand or another metal cooking instrument that you can safely use to prop open the lid of the griddle. Prepare and stuff the turkey as you routinely would. 

Place it on the griddle so that it is positioned over one burner that you can turn off. Turn that burner off and the other burner or burners on. Since you can’t really “flip” a turkey, you would like the turkey to cook by indirect heat, not by a direct flame underneath it. You get the hazy flavor by employing wood chips. If you have not used wood chips before, they are simple to use. You soak them in water so that as they dry out from the heat of the griddle, they’ll release a seasoned smoke that infuses the turkey. 

You should purchase a tray that is designed for putting wood chips on the grill or you can make one yourself from heavy duty tin foil. Take the wood chips out of the water and put them into your tray. Place the tray on the griddle over the lit burner. Next, close the lid entirely if at all possible. If not possible, prop the lid up acceptable to keep it from touching the turkey. 

Then cover the rest of the opening with foil. If heat gets out you will generally have to cook the turkey longer. However, the foil creates enough of a barrier so the smoke is kept circulating inside the griddle and flavoring the turkey. The time needed to cook the turkey will change depending on if or not you were able to close your grill completely. 

If you can, it’ll take less time. If you can’t, you may need to increase the heat on the other burner or burners to try to make up for the lost heat by having to prop open the grill. After a couple of hours, revolve the turkey 180 degrees to help ensure even cooking. As with any system of cooking birds, it is important to make sure that the internal temperature of the beef reaches 160 degrees Fahrenheit. Ideally you must employ a meat thermometer to observe the temperature as you cook. If you don’t have one, then you could have to check the readiness by poking the thigh with a fork or skewer. If the juices that run out are clear and the turkey has turned a nice golden-brown color, then you are ready to get rid of it from the grill. Consider glazing the turkey with a sauce you use on other meats, or possibly adding barbecue sauce to the traditional cranberry sauce as a seasoning. Don’t be scared to experiment – enjoy the novel development you are putting on an old family tradition.

Cooking Turkey Instructions

1. Heat stove to 325. Take the wrapper to see how much the turkey weighs and determine approximate cooking time. Remove the giblet bag and the neck from the turkey cavity. Wash the turkey inside and out and pat skin dry with paper towels. 

2. Place turkey breast side up on a rack in a shallow [ about 2 inches deep ] roasting pan. Insert beef thermometer in thigh. Add 1/2 cup water to the bottom of pan, if desired. 

3. Cover turkey loosely with a tent of heavy-duty aluminum foil. Roast the turkey until temperature in the thickest part of the thigh reaches 180°F. Cooking time will vary. For instance, a twenty pound turkey will take 4 1/4 to 5 hours to cook, check the temperature on the thermometer after four 1/2 hours. 

4. Meanwhile, mix the stuffing or dressing. Place in a stew and pop it into the cooker in the last hour or so of roasting time. 

5. Remove the foil tent after 1 to 1 1/2 hours of cooking time to brown the skin. Brush with vegetable oil to boost browning, if required. 

6. An entire turkey is done when the temperature reaches 180F. The thigh juices should run clear [ not pink ] when pierced with a fork and the leg joint should move freely. 

7. Allow the turkey to set twenty to 30 mins before carving to permit juices to saturate the meat evenly. 

Stuffed Turkey : 

The USDA suggests cooking the stuffing outside of the bird [ see step four above ] If you insist on stuffing the turkey, stuff loosely and follow the steps below. 

1. See step one above 

2. Mix stuffing and lightly fill hole. Permit 1/2 to 3/4 cup stuffing per lb of turkey. It is safer to understuff than to overstuff the turkey. Stuffing expands during cooking. Cool any leftover stuffing and bake in greased casserole during the last hour of turkey roasting time. 

3. Place turkey breast side up on a rack in a shallow [ about 2 inches deep ] roasting pan. Insert meat thermometer in thigh [ see Turkey Safety : Using a Thermometer ]. Add up to 0.5 cup water to the bottom of the pan, if required. 

4. Cover turkey loosely with a tent of professional quality tin foil. Cooking time takes longer for a stuffed turkey. As an instance, a 20 pound stuffed turkey will take 4 1/4 to 5 1/2 hours to cook. 

5. Take out the foil cover after about 1 to one [*FR1] hours of cooking to brown the skin. Brush with plant oil to enhance browning, if required. 

6. A whole turkey is done when the temperature in the thickest part of the inner thigh reaches 180°F and the stuffing is 165°F. The juices should run clear [ not pink ] when a long-tined fork is used to pierce the thickest part of the thigh. 

7. Check the internal temperature of the stuffing. Insert the thermometer thru the cavity into the thickest part of the stuffing and leave it for 5 minutes. The stuffing temperature will rise some degrees after the turkey is removed from the oven. If the middle of the stuffing has not reached 165F after stand time, return the turkey to the cooker and continue cooking.
